EASTER PROTEIN SCONES

INGREDIENTS:

  • 1¼ cup flour (normal or gluten free)
  • ¼ cup coconut flour
  • ¼ cup xylitol/erythritol
  • 1½ scoops USN BLUELAB™ 100% Whey Speckled Eggs flavour
  • 1 TBS baking powder
  • ¾ cup plain yoghurt
  • 1 egg
  • 1 tsp vanilla essence
  • A small bag of @sugarlean_za smarts (or chocolate chips)

 

METHOD:

Preheat oven to 180 degrees and line a baking tray with some baking paper. Set aside.

Add the flours, protein powder, xylitol and baking powder to a bowl and mix together.

In a separate bowl, add the yoghurt, egg and vanilla and mix until smooth.

Fold the wet ingredients into the dry until a crumbly dough starts to form.

Add the @sugarlean_za smarts.

With clean hands, put the dough onto the baking tray and press it out into a big circle.

Bake for 10 to 15 minutes.

Take the tray out of the oven and cut into slices. The scones will harden as they cool.
